Galvanizing is a process that's used to help protect steel from rust and to extend the life of the metal. Zinc Leaching
One of the dangers of galvanized metal is that the zinc coating can leach into food if it's left in contact with the metal. Allergies
Some people have allergies to zinc. Most often the allergies take the form of rashes on the skin when they come into contact with zinc. These people should be careful when handling galvanized stove pipe and should wear protective gloves and sleeves.
Overall Safety
If a galvanized stove pipe is properly installed, which means that it leads from a stove into a chimney or other exit, then it should be perfectly safe. The pipe will not leak fumes like it does when it's being welded, nor will it be coming into contact with food or drink. The outside of the pipe should be insulated, so people shouldn't have allergic reactions to touching it.
